These biccies are a great treat, especially with of course a cup of tea. However I reckon the story behind them, makes them even more special.
Anzac biscuits have long been associated with the Australian & New Zealand Army Corps (ANZAC) established in World War 1. It has been claimed the biscuits were sent by wives to soldiers abroad because the ingredients do not spoil easily and the biscuits kept well during naval transportation. Anzac Day is a national day of remembrance in Australia and New Zealand, which is celebrated on 25th May all around the world. Anzac biscuits are a small symbol of this special day and even though this post is ever so slightly late, I still think its one that should be shared.
The recipe that I found, is from a book I have previously mentioned; Annie Rigg’s: Gifts from the Kitchen. Its a great book and so is this recipe. So when Anzac Day comes around, the smell of these biscuits should be baking in peoples kitchens!
Ingredients:
- 85g porridge oats
- 85g desiccated coconut
- 100g caster sugar
- 100g plain flour
- 100g butter, plus some extra for greasing
- 1 tablespoon golden syrup
- 1 teaspoon bicarbonate of soda
Method:
1) Heat oven to 180C/fan 160C/gas 4. Put the oats, coconut, flour and sugar in a bowl. Melt the butter in a small pan and stir in the golden syrup. Add the bicarbonate of soda to 2 tbsp boiling water, then stir into the golden syrup and butter mixture.
2) Make a well in the middle of the dry ingredients and pour in the butter and golden syrup mixture. Stir gently to incorporate the dry ingredients.
3) Put dessertspoonfuls of the mixture on to buttered baking sheets, about 2.5cm/1in apart to allow room for spreading. Bake in batches for 8-10 mins until golden. Transfer to a wire rack to cool.
Just a little tip, dip the spoon into a cup of boiling water, then the syrup and it slides straight of the spoon. This also works for honey, treacle, and anything seriously sticky!
Also these little treats look even more special when wrapped up in a small square of grease proof paper and tied together with some ribbon!
