Recipe: Karithopita – Greek Walnut Cake with Olive Oil

The recipe is from Corfu, in a small town called Arillas from a restaurant along the beach called Eftihia. The idea to bake the cake came from that restaurant whilst on holiday in Greece this summer.
For the cake:
- 1 cup of olive oil
- 1 cup of granulated sugar/caster sugar
- 1 teaspoon of lemon rind
- 4 eggs, separated
- 1 cup of flour
- 4 teaspoons of baking powder
- 2 teaspoons of ground cinnamon
- 2 1/2 cups of chopped walnuts Small amount of butter for the baking pan
For the syrup:
- 2 cups of sugar
- 2 cups of hot water
- 1 cinnamon stick
- 3 whole cloves
- 1 tablespoon of lemon rind
Method:
- Preheat the oven to 350°F
- It takes 45-50 minutes to cook/bake
- To be on the safe side, it’s best to check the cake with a cake tester or skewer to see if it’s cooked all the way through
