Recipe Karithopita - Greek Walnut Cake with Olive Oil

The recipe is from Corfu, in a small town called Arillas from a restaurant along the beach called Eftihia. The idea to bake the cake came from that restaurant whilst on holiday in Greece this summer.

For the cake:

  • 1 cup of olive oil
  • 1 cup of granulated sugar/caster sugar
  • 1 teaspoon of lemon rind
  • 4 eggs, separated
  • 1 cup of flour
  • 4 teaspoons of baking powder
  • 2 teaspoons of ground cinnamon
  • 2 1/2 cups of chopped walnuts Small amount of butter for the baking pan

For the syrup:

  • 2 cups of sugar
  • 2 cups of hot water
  • 1 cinnamon stick
  • 3 whole cloves
  • 1 tablespoon of lemon rind

Method:

  • Preheat the oven to 350°F
  • It takes 45-50 minutes to cook/bake
  • To be on the safe side, it’s best to check the cake with a cake tester or skewer to see if it’s cooked all the way through
